- 120grams pâté
- 2 carrots, grated
- 2 long red chillies, sliced
- 1 cup coriander sprigs
- 2 Lebanese cucumbers, sliced diagonally
- 2 spring onions, thinly sliced
- 6 crusty jumbo long bread rolls
- 2tablespoons white balsamic vinegar
- 1tablespoons chilli sauce
- 1/3 cup whole egg mayonnaise
- 1 barbecue chicken (or chinese bbq pork from the deli)
- 1teaspoons sea salt flakes
- 1tablespoons caster sugar
- 1 handful large green oak lettuce

Method
Step 1 of 4
Combine vinegar, sugar and salt in a bowl. Add carrot and stir. Cover and stand for 30 minutes or until carrot is softened.
Step 2 of 4
Remove meat from chicken and discard skin and bones. Shred chicken and place in a bowl.
Step 3 of 4
Split rolls in half. Combine mayonnaise and chilli sauce.
Step 4 of 4
Drain carrot. Spread rolls with pâté. Fill with lettuce, chicken, carrot, onion, coriander, mayonnaise and sliced chilli. Serve with cucumber.
