- 425grams John West Chunky Tuna, drained, flaked
- 420grams Edgell corn kernels, rinsed, drained
- 1 1/2 cups Woolworths shredded tasty cheese
- 8 Woolworths flour tortillas
- 5milliliter olive oil cooking spray
- 1 long red chilli, sliced (to serve)
- 1/3 bunch coriander, leaves picked (to serve)
- 1/2 cup sour cream (to serve)
Description
Mexican tonight? This scrumptious quesadilla recipe is made with soft flour tortillas and tuna and corn for lots of yummy flavour. The family will love it.
Method
Step 1 of 4
Combine tuna, corn and cheese in a medium bowl.
Step 2 of 4
Heat a large, heavy-based frying pan over medium-low heat. Spray 1 tortilla with oil and place, oil-side down, on a board. Spread one-quarter of the tuna mixture over tortilla. Cover with a second tortilla and spray with oil. Place tortilla stack in pan and cook for 2 minutes, pressing edges together. Carefully turn over tortilla stack, then cook for a further 2 minutes or until golden. Transfer to a plate and cover to keep warm.

Repeat with remaining tortillas and tuna mixture to make a total of 4 quesadillas.
Step 4 of 4
Cut each quesadilla into quarters. Scatter over chilli and coriander, then serve with sour cream.
