  • 400grams duck breasts, fat scored
  • 4tablespoons soy sauce, reduced salt
  • 2tablespoons honey
  • 1tablespoons canola oil, divided
  • 5centimeters ginger, peeled and sliced into matchsticks
  • 3 cloves garlic, peeled and minced
  • 1L chicken stock, made with 2 stock cubes, hot
  • 300grams egg noodles, fresh
  • 2 heads bok choi, finely sliced
  • 4 medium spring onions, sliced, tops reserved
  • 2tablespoons grapefruit juice, fresh
  • 1 medium red chilli, sliced
  • 2tablespoons sesame seeds (to serve)

Description

Sticky honey duck adds richness and lots of flavour to this extra special sesame ramen.

Method

Step 1 of 5

Pre-heat the oven to 200°C. Marinate the duck breasts in soy sauce in a shallow dish for 15 minutes. Brush the skin with honey, place in a roasting tin and roast for 15-20 minutes until cooked to your liking. Set aside to rest.

Step 2 of 5

Heat the oil in a deep pan on medium heat and cook the garlic and ginger for 2 minutes.

Step 3 of 5

Pour over the stock, bring to the boil and reduce the heat. Simmer for 10 minutes.

Step 4 of 5

Bring the soup back to the boil, add the noodles and bok choi and cook for 4 minutes, stir in the spring onions and cook for 2 minutes. Season with grapefruit juice.

Step 5 of 5

Serve in bowls with sliced duck breast, chilli, spring onion tops and sesame seeds scattered on top.
