  • 500grams cooked tiger prawns, peeled, deveined, tails intact
  • 1teaspoons sesame oil
  • 2teaspoons fish sauce
  • 1/3 cup snow pea sprouts, trimmed
  • 1 red capsicum, deseeded, thinly sliced
  • 1/3 cup coriander leaves (to garnish)
  • 100grams snow peas, trimmed
  • 1 lemon, juiced
  • 1/4 cup soy sauce
  • 500grams fresh egg noodles
  • 1tablespoons olive oil
  • 1/4 cup slivered almonds, toasted

Method

Step 1 of 3

Cook noodles according to packet instructions. Blanch snow peas in boiling water for 1-2 minutes. Drain.

Step 2 of 3

To make the dressing, whisk soy sauce, lemon juice, oils and fish sauce in a jug.

Step 3 of 3

Combine noodles, snow peas, prawns, sprouts, capsicum and almonds in a bowl. Add dressing and toss gently. Serve garnished with coriander.
