- 500grams cooked tiger prawns, peeled, deveined, tails intact
- 1teaspoons sesame oil
- 2teaspoons fish sauce
- 1/3 cup snow pea sprouts, trimmed
- 1 red capsicum, deseeded, thinly sliced
- 1/3 cup coriander leaves (to garnish)
- 100grams snow peas, trimmed
- 1 lemon, juiced
- 1/4 cup soy sauce
- 500grams fresh egg noodles
- 1tablespoons olive oil
- 1/4 cup slivered almonds, toasted
Description

Method
Step 1 of 3
Cook noodles according to packet instructions. Blanch snow peas in boiling water for 1-2 minutes. Drain.
Step 2 of 3
To make the dressing, whisk soy sauce, lemon juice, oils and fish sauce in a jug.
Step 3 of 3
Combine noodles, snow peas, prawns, sprouts, capsicum and almonds in a bowl. Add dressing and toss gently. Serve garnished with coriander.
