  • 400grams Woolworths spaghetti
  • 1 1/2 cups pitted Sicilian olives, 2/3 cup brine reserved
  • 1tablespoons extra virgin olive oil
  • 3 cloves garlic, crushed
  • 1 lemon, zested, juiced
  • 1/3 cup gin
  • 2/3 cup light thickened cream
  • 1/2 bunch continental parsley, leaves picked, finely chopped
  • 30grams unsalted butter, chilled
  • 60grams parmesan, finely grated
  • 4 metal skewers

Description

Sicilian olives, lemon zest and garlic amp up the flavour in this delightful dinnertime pasta. Serve with a skewer of olives to really play up the martini fun.

Method

Step 1 of 4

Bring a large saucepan of water to the boil. Add pasta and cook for 12 minutes or until just tender. Drain and reserve 1 cup cooking liquid.

Step 2 of 4

Reserve a few olives to thread onto skewers to serve, if desired. Set aside. Coarsely chop remaining olives. Heat oil in a large frying pan over low heat. Add garlic, olives and lemon zest. Cook, stirring, for 1 minute or until fragrant. Add gin and increase heat to medium. Allow to simmer for 2 minutes or until liquid has slightly reduced.

Stir in cream, brine and lemon juice. Bring to a simmer. Increase heat to high, then add pasta and 1/2 cup reserved cooking water. Cook, tossing constantly and adding more water if needed, until pasta is well coated and sauce emulsified.

Step 4 of 4

Stir in parsley, butter and parmesan until melted. Season with pepper. Divide among serving bowls. Sprinkle with remaining parmesan and arrange olive skewers on top, if using. Serve.
