Method

Step 1 of 3

Scoop egg yolks into a small bowl. Add lime juice and mash well with a fork until smooth. Stir in spring onion and coriander.

Place egg whites onto a serving plate. Spoon mixture into hollows.

Sprinkle with cayenne and top with a coriander leaf.
