  • 2tablespoons sesame oil
  • 500grams Woolworths lean pork mince
  • 3 cloves garlic, crushed
  • ginger, cut into 2cm-piece, peeled, finely grated
  • 1/2teaspoons black peppercorns, ground
  • 1/3 cup natural smooth peanut butter
  • 1/3 cup kecap manis
  • 1/4 cup rice wine vinegar
  • 2tablespoons chilli oil (see tip)
  • 270grams dried udon noodles
  • 1 bunch Chinese broccoli, roughly chopped
  • 1/4 cup peanuts, 1/4 cup chopped (to serve)
  • 1/2teaspoons dried chilli flakes (to serve)
  • 1/4 bunch coriander, leaves picked (to serve)

Description

Wow the family with an impressive and easy dinner. This dan dan noodle soup boasts a spicy peanut and chilli broth and crispy pork mince, and is ready in 15 minutes.

Method

Step 1 of 3

Heat sesame oil in a large frying pan over medium heat. Add mince, garlic, ginger and peppercorns, then cook, breaking up lumps with a wooden spoon, for 5 minutes or until browned.

Meanwhile, whisk peanut butter, kecap manis, vinegar and chilli oil together in a small jug. Reduce heat to low and add peanut butter mixture to pan. Cook, stirring, for 2 minutes or until sauce has caramelised and is sticky. Transfer mince mixture to a heatproof bowl. Cover loosely with foil and set aside. Return pan to high heat. Add stock and bring to the boil.

Step 3 of 3

Cook noodles according to packet instructions, adding broccoli to pan in the last 2 minutes of cooking. Drain. Divide noodles and broccoli among bowls. Top with mince mixture, then ladle over stock. Serve topped with peanuts, chilli flakes and coriander.
