- 1 red capsicum
- 2 small onions
- 3 garlic cloves
- 400milliliter coconut cream
- 150grams spinach
- 1tablespoons tumeric for colour
- 200milliliter chicken stock
- 2 rashers bacon, chopped

A creamy warm chicken curry with minimal spices, so an easy meal for all.
Method
Step 1 of 5
Oil your pot and fry your bacon until crisp and fat is rendered. Remove from the pot leaving a little bit of oil
Step 2 of 5
Saute your onions and garlic then add your chicken pieces in small batches until evenly browned
Step 3 of 5
Add back bacon and mix in your coconut cream and chicken stock slowly. Leave to simmer for 10 minutes
Step 4 of 5
Add your sliced capsicum and spinach and leave for a further 15 minutes.
Step 5 of 5
Add turmeric to colour your curry to your preference in small amounts. Serve with steamed rich
