Description

This creamy chicken & pesto pasta is perfect for a midweek dinner. You only need four ingredients and it's ready in 20 minutes.

Method

Step 1 of 4

Cook pasta in a saucepan of boiling, salted water according to packet instructions. Drain and return to pan.

Step 2 of 4

Meanwhile, heat 1 tbs extra virgin olive oil in a large, deep frying pan over medium-high heat. Cook chicken, turning occasionally, for 12 minutes or until chicken is cooked through. Remove chicken from pan and cover to keep warm.

Step 3 of 4

Add cream to pan and bring to the boil. Reduce heat to medium-low and simmer, uncovered, for 3 minutes or until cream has reduced slightly. Meanwhile, thickly slice chicken, then shred into pieces.

Step 4 of 4

Add pasta, chicken and pesto to cream mixture. Toss gently to combine. Season and serve.
