  • 1/3 cup raw cashews
  • 2 cups fresh basil leaves
  • 1 cup fresh parsley leaves
  • 1 garlic clove, crushed
  • 1 cup Perfect Italiano Parmesan Block, grated
  • 165milliliter olive oil
  • 300grams dried linguine

Description

Make an easy pesto pasta from scratch with this recipe featuring parmesan, cashews, fresh basil and fresh parsley. Enjoy with extra parmesan on top.

Method

Step 1 of 3

To make pesto, place cashews, basil, parsley, garlic, half the Parmesan & olive oil into a food processor. Process until smooth. Season with sea salt & black pepper.

Step 2 of 3

Cook linguine in a large saucepan of boiling, salted water for about 10 minutes, or until tender. Drain & toss with the pesto.

Step 3 of 3

Serve sprinkled with the remaining Parmesan to serve.
