- 400grams spaghetti
- 2tablespoons butter
- 1/2tablespoons olive oil
- 1/2teaspoons truffle oil
- 100grams parmesan
- 1 pinch black pepper
Description
Simple cacio e pepe pasta is even more delicious with a hint of earthy truffle.
Method
Step 1 of 3
Bring a large pot of water to the boil and add the spaghetti. Cook for 8 minutes, until al dente, and reserve 250ml of cooking water.
Step 2 of 3
Heat the butter and olive oil in a large pan on medium high heat until the butter is foaming. Remove from the heat and add the truffle oil, spaghetti and parmesan, toss to coat the spaghetti and add as much pasta water as necessary to get a sauce consistency.
Step 3 of 3
Season with cracked black pepper and extra truffle oil and serve.
