Description

Crab, spinach and lemony breadcrumbs make this a delicious mac and cheese with a difference.

Method

Step 1 of 4

Pre-heat the oven to 180°C. Bring a large pan of water to the boil and cook the macaroni for 7 minutes. Add the spinach and cook for 2 more minutes, until wilted. Drain and tip into a large baking dish.

Step 2 of 4

Heat the butter in a large, deep pan on medium heat and stir in the mustard and flour. Pour in a quarter of the milk. Stir to thicken, then gradually add the remaining milk, stirring all the time until you have a thick sauce. Remove from the heat, add the cheddar and stir until melted.

Step 3 of 4

Stir half of the crabmeat into the sauce and add to the macaroni and spinach and mix well. Scatter the rest of the crabmeat on top with a squeeze of lemon juice. Whisk the breadcrumbs and lemon zest together in a bowl, stir in the parsley and top the macaroni with an even layer.

Step 4 of 4

Drizzle with a little oil and bake for 20 minutes until golden and bubbling.
