Description

This mac and cheese is loaded with green goodness and lots of flavour.

Method

Step 1 of 3

Pre-heat the oven to 200°C/180°C fan-forced. Melt the butter in a saucepan and stir in the flour. Cook, stirring, for 2 minutes to make a roux. Gradually add the milk, stirring all the time, until thick. Bring to the boil, add the cheddar, mustard powder and parmesan and cook for 1 minute until melted.

Cook the macaroni for 5 minutes in a pan of boiling water, add the broccoli, kale and peas, cook for 3 minutes and drain well.

Step 3 of 3

Tip the macaroni and vegetable mix into the cheese sauce and stir well to coat. Pour the mix into a baking dish, top with breadcrumbs and bake for 20-25 minutes until golden and bubbling.
