  • 500grams dried macaroni
  • 4 cup reduced-fat milk
  • 150grams gruyere
  • 10 slices pancetta

Method

Step 1 of 4

Preheat oven to 200°C. Grease a 10-cup capacity baking dish. Cook macaroni in a large saucepan of boiling salted water following packet instructions or until just tender. Drain. Transfer to dish and set aside.

Meanwhile, melt butter in a large deep-frying pan over medium-high heat. Add onion, pancetta and mushroom. Cook for 12 minutes, stirring occasionally, or until mushroom is golden.

Step 3 of 4

Sprinkle in flour and stir until well combined. Cook for 1 minute or until slightly thickened. Slowly add milk, stirring constantly, until well combined, then cook for 8 minutes, stirring constantly, or until mixture comes to the boil. Cook for 3 minutes, then remove from heat and set aside to cool for 5 minutes.

Step 4 of 4

Stir through three-quarters of each cheese. Stir sauce into macaroni. Sprinkle over remaining cheeses and bake for 35 minutes or until golden. Scatter over parsley and serve.
