- 350grams original pancake shaker
- 150grams chocolate cream biscuits, crushed (see Tip)
- 25grams butter, melted
- 250grams cream cheese
- 1/4 cup icing sugar mixture
- 1/2teaspoons vanilla extract
- cookies & cream ice-cream and chocolate sauce (to serve)
Description
Put a cookies and cream twist on fluffy pancakes with this deceptively easy pancake recipe that's perfect for a sweet breakfast or afternoon tea.
Method
Step 1 of 4
Make pancake batter according to shaker instructions. Add 1/4 cup biscuits and shake to mix.
Step 2 of 4
Heat a large frying pan over medium heat. Grease with a little melted butter. Spoon 1/3 cup batter into pan, spreading to form a 12cm round. Repeat to make another pancake. Cook for 3 minutes or until bubbles form on top. Flip and cook for 1 minute or until golden and cooked through. Transfer to a plate and keep warm. Repeat with remaining batter to make a total of 8 pancakes, greasing pan with a little butter, if necessary.

Meanwhile, combine cream cheese, sugar and vanilla in a medium bowl.
Step 4 of 4
Create 4 pancake stacks, layering with cream cheese mixture. Scatter over three-quarters of the remaining biscuits, then serve topped with ice-cream, chocolate sauce and remaining biscuits.
