  • 500grams boneless chicken thigh fillets
  • 2 cans diced tomatoes
  • 2tablespoons tomato paste (salt reduced)
  • 50grams hot hungarian salami , finely diced (or bacon)
  • 1 carrot, grated
  • 1/2 cup black olives, sliced
  • 1/2teaspoons dried chili flakes
  • 1/4teaspoons dried oregano
  • 2tablespoons fresh or semi-dried parsley
  • 2tablespoons grated parmesan cheese

Method

Step 1 of 2

Heat a large, non-stick frying pan on medium-high. Meanwhile, trim visible fat from chicken and cut into bite-size pieces. Sear the chicken on all sides until golden brown. Add salami (or bacon) and cook a further minute or two.

Step 2 of 2

Add tinned tomatoes, tomato paste, grated carrot, oregano and chili flakes. Reduce heat to a simmer, stir occasionally for 30-40 minutes to allow the sauce to thicken and reduce slightly. Ten minutes before serving, add the sliced black olives. To serve, sprinkle with parsley and a little parmesan cheese.
