  • 3kilograms ripe tomatoes
  • 1/4 cup extra virgin olive oil
  • 2 large brown onions, finely chopped
  • 8 cloves garlic, finely chopped
  • 3/4 cup tomato paste
  • 1teaspoons sea salt
  • ground pepper
  • 1 bunch fresh basil leaves (leaves stripped)

Description

This simple tomato sauce is the perfect pasta accompaniment. Use it stirred through plain pasta or as a base for meatballs or lasagne. Ideal for batch cooking and freezing for later.

Method

Step 1 of 4

Using a small paring knife, cut a cross in the skin at the base of each tomato. Bring a large pot of water to a rolling simmer. Drop in tomatoes, in batches, for 1-2 minutes or until skin is beginning to come away. Remove tomatoes with a slotted spoon and set aside to cool slightly. Repeat with remaining tomatoes then peel. Roughly chop peeled tomatoes, discarding the stem area.

Heat oil in a large, deep, frying pan or pot on medium. Add onion and cook for 5 minutes, until softened. Add garlic and cook for 1 minute until fragrant. Add tomato paste, salt and pepper. Mix well and cook for 1 minute, until well combined.

Step 3 of 4

Add chopped tomato and basil. Mix well. Bring to the boil, then reduce heat to low and simmer uncovered for 45-50 minutes, until sauce thickens. Remove from heat and set aside to cool.

Step 4 of 4

Spoon into jars or airtight containers. Refrigerate for up to 3 days or freeze for up to 3 months.
