- 2tablespoons extra virgin olive oil
- 500grams chicken breast fillets, thinly sliced
- 1 brown onion, thinly sliced
- 1 green capsicum, thinly sliced
- 365grams Old El Paso Quesadilla Kit
- 2 cups light tasty shredded cheese
- 1 avocado, mashed
- 1 tomato, finely chopped
- 1/4 cup Old El Paso Green Jalapeños, coarsely chopped
- 1/2 red onion, finely chopped
- 1/4 bunch coriander, coarsely chopped
- 1 lime, cut into wedges
Description
They’re a classic for a reason, and these chicken quesadillas (plus creamy guacamole!) are guaranteed to please the whole crowd.
Method
Step 1 of 3
Heat 1 tbs oil in a large frying pan over medium-high heat. Add chicken and cook, stirring, for 2-3 minutes or until browned. Add brown onion, capsicum and spice sachet from kit. Cook, stirring, for 4-5 minutes or until chicken is cooked. Transfer to a bowl. Cover to keep warm. Wipe pan clean.
Step 2 of 3
Add remaining oil to pan and heat over medium-high heat. Place a tortilla from kit in pan. Top one half of the tortilla with cup cheese, then top with one-eighth of the chicken mixture. Fold tortilla over to form a semicircle, pressing down to seal. Cook for 1-2 minutes or until golden underneath. Turn and cook for a further 1-2 minutes or until heated through and golden-brown. Transfer to a plate and cover. Repeat to make 8 quesadillas in total.
Step 3 of 3
In a bowl, combine guacamole spice sachet from kit with avocado. Combine tomato, jalapeño, red onion and coriander in a separate bowl. Cut quesadillas into triangles. Top with salsa. Serve with guacamole and lime.
