  • 500grams La Molisana Pastificio Extra Di Lusso Rigatoni Divini
  • 1/3 bunch continental parsley, chopped
  • 1/2 cup shredded parmesan
  • 60grams baby rocket leaves
  • 1/2 cup pistachios, toasted, coarsely chopped
  • 1/2 cup extra virgin olive oil
  • 300mL light thickened cream
  • 188grams smooth ricotta
  • 1tablespoons dried chilli flakes

Description

Does it get any easier than this one-pot pasta-piece? Aromatic pesto, crunchy pistachios and creamy ricotta will delight the senses.

Method

Step 1 of 4

Cook pasta following packet instructions or until al dente. Drain.

Step 2 of 4

Meanwhile, process parsley, parmesan, 40g rocket and half of the pistachio until combined. Add oil and process until almost smooth.

Step 3 of 4

Place cream in a large, deep frying pan and bring to the boil over high heat. Reduce heat. Add pasta and pesto and toss to combine.

Step 4 of 4

Divide pasta amongst bowls. Top with ricotta, remaining pistachio and remaining rocket. Sprinkle with chilli. Serve.
