Description

Drizzled in melted chocolate, this rich recipe takes chocolate cheesecake to a whole new level of decadence. Treat loved ones to this indulgent dessert for Easter.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced. Grease a 22cm springform pan. Line pan with 3 x 50cm-long sheets of baking paper, layering in a criss-cross formation, and allow excess to extend over the edge of pan. Place pan on a baking tray.

Meanwhile, place cream cheese in a large food processor. Process until smooth. Add sugar, vanilla and eggs. Process until combined. Add thickened cream. Sift flour and cocoa into processor. Process, scraping down sides until combined.

Step 3 of 4

Pour mixture into prepared pan. Place in oven. Reduce oven temperature to 200°C/180°C fan-forced. Bake for 1 hour or until the top starts to brown and cheesecake has a slight wobble. Turn the oven off. Stand cheesecake in the oven with the door ajar for 10 minutes to cool slightly. Remove cheesecake from the oven and cool at room temperature for 1 hour. Refrigerate for 4 hours or overnight to chill.

Remove cheesecake from fridge 20 minutes before serving. Place chocolate in a microwave-safe bowl. Microwave on high for 30 seconds, stirring halfway through with a metal spoon, until melted and smooth. Remove cheesecake from the pan. Cut into pieces. Drizzle with melted chocolate. Serve.
