  • 300grams chocolate cookies
  • 100grams unsalted butter, melted
  • 150grams strawberries, frozen, thawed
  • 2 sheets gelatin sheets, soaked in cold water for 1 minute
  • 200grams semi-sweet chocolate chips
  • 800grams cream cheese, room temperature
  • 250milliliter heavy cream
  • 150grams powdered sugar, sifted

Description

The classic duo of chocolate and strawberries layered on top of a chocolate cookie crust, this no bake cheesecake recipe couldn't be simpler or more delicious.

Method

Step 1 of 3

Spray a 23X6 cm springform cake pan with non-stick spray. Add the chocolate cookies and melted butter to a food processor, pulse until the cookies and butter start to clump and stick together. Press the crust firmly into the base of the springform pan.

Step 2 of 3

Use a blender to puree the strawberries added them to a bowl. Heat the puree for 45 seconds in the microwave to warm slightly, whisk in 2 sheets of the soaked gelatin until the sheets have dissolved. Add the chocolate chips to a bowl, microwave in 30 second intervals until melted, set aside to cool slightly.

Step 3 of 3

Whisk the cream cheese in a large bowl until smooth, add in the heavy cream and powdered sugar continuing to whisk until combined. Divide the cream cheese mixture evenly between the strawberry puree and melted chocolate, folding them together to combine. Spread the chocolate mixture on top of the chocolate crust, add the layer of strawberry mixture spreading the batter out evenly. Place into the fridge for a minimum of 8 hours to set before removing from the springform pan and slicing the cake into 8 slices and serving.
