  • 1/2 cup almond spread, warmed
  • 1/3 cup cacao powder
  • 200grams dried apple slices, chopped
  • 3/4 cup coconut oil, melted

Method

Step 1 of 4

Preheat the oven to 180°C. Line a 20x30cm lamington pan with baking paper, leaving sides to overhang.

Step 2 of 4

Process oats, flour and 1/4 cup of coconut sugar in a food processor until oats are finely chopped. Add almond spread and vanilla extract and process until combined. Press mixture into prepared pan. Bake for 20 minutes or until golden. Allow to cool.

Step 3 of 4

Meanwhile, place apple, 1/2 cup of coconut sugar and 1 cup of water in a small saucepan over medium heat. Bring to the boil, then reduce heat to low, cover and simmer for 15 minutes or until very soft. Add bicarbonate of soda and remove from heat. Transfer to a food processor and process until smooth. Add 1/2 cup of the coconut oil and process to combine. Spread over base and chill for 30 minutes.

Step 4 of 4

Combine cacao and remaining 1/4 cup of coconut sugar in a small bowl. Add remaining 1/4 cup coconut oil and 1/4 cup boiling water and stir until smooth and glossy. Spread over filling and refrigerate for 2 hours or until firm. Cut into 20 squares to serve.
