  • 250grams butter, melted
  • 0.(3) cup golden syrup
  • 790grams sweetened condensed milk
  • 2teaspoons vanilla essence
  • 250grams dark chocolate melts
  • 1tablespoons vegetable oil
  • 1 pinch salt flakes

Method

Step 1 of 5

Line a 20cm x 30cm slice tin with baking paper. Preheat oven to 160°C fan (180°C conventional).

Step 2 of 5

Process biscuits in a food processor for 10-20 seconds until small pieces, but not a powder. Pour half the melted butter over the crumbs and process for 10 seconds until just combined.

Tip crumbs into prepared tin and spread out, pressing crumbs down firmly until it is a smooth even layer. An offset palette knife or the back of a metal spoon will help.

Place golden syrup, condensed milk, and vanilla in a medium saucepan and stir frequently with a silicone spatula or whisk, making sure it doesn’t catch on the bottom of the pan, for 5 minutes or until slightly thickened and starting to deepen in colour. It will darken further in the oven. Pour into tin on top of crumb base and bake in preheated oven for 15 minutes. Allow to cool completely. Chill in freezer for 10 minutes to speed it up.

Place a heatproof bowl over a saucepan with 3cm of simmering water, and put chocolate melts and vegetable oil in bowl. Stir until chocolate is melted. Pour over caramel in tin. Tip tin gently to allow the chocolate to evenly coat the caramel. Allow to set at room temperature. Once set, slice into squares.
