- 250grams dried Chang's vermicelli rice noodles
- 40grams Helpful Harvest dehydrated veggie mix
- 2teaspoons vegetable oil
- 500grams Woolworths lean pork mince
- 1 bird's eye chilli
- 1/2 cup Chang's crispy noodle salad dressing
- 1/4 bunch Woolworths Thai basil, leaves picked
Description
A vibrant, low-cost weeknight meal that packs a flavourful punch with juicy pork mince, stir-fried veggies, vermicelli rice noodles, chilli, basil and a zesty dressing.
Method
Step 1 of 4
Place noodles and veggie mix in a large heatproof bowl. Add enough boiling water to cover. Set aside for 5 minutes to soak.
Step 2 of 4
Meanwhile, heat oil in a large frying pan or wok over medium-high heat. Add mince. Cook, stirring often with a wooden spoon to break up lumps, for 4 minutes or until cooked through. Add chilli. Cook, stirring, for 1 minute.
Step 3 of 4
Drain noodle mixture. Add to mince with ⅓ cup dressing. Season. Toss to combine. Remove from heat.
Step 4 of 4
Divide among serving bowls. Drizzle with remaining dressing. Top with basil. Serve.
