  • 3/4 cup Woolworths basmati rice
  • 1tablespoons extra virgin olive oil
  • 1/2 butternut pumpkin, finely diced
  • 200grams Woolworths pork mince
  • 1/4 cup tandoori paste
  • 1/3 bunch coriander
  • 24 small plain uncooked pappadums, cooked (see tip)
  • 1/2 cup mango chutney
  • 1 1/3 cup Woolworths Greek-style natural yoghurt

Description

Enjoy these tandoori-style pork and rice pappadums as an entree or as appetisers to delight a crowd. They're topped with chutney and yoghurt for extra spunk.

Cooking tip:

Microwave pappadums, in batches, for 30 seconds to 1 minute or until puffed and golden.

Method

Step 1 of 3

Cook rice following packet instructions until tender. Drain.

Step 2 of 3

Meanwhile, heat oil in a large non-stick frying pan over medium-high heat. Add pumpkin and cook, stirring, for 4-5 minutes or until slightly tender. Add pork and cook, stirring to break up any lumps, for 2 minutes or until browned. Stir in paste and cook, stirring occasionally, for a further 3 minutes or until mixture is fragrant and pumpkin is tender.

Finely chop coriander stems. Coarsely chop coriander leaves. Add rice and coriander stems to pork mixture and mix well. Spoon rice mixture onto pappadams. Top pappadums with yoghurt, chutney and coriander leaves. Serve.
