  • 1 1/2tablespoons extra virgin olive oil
  • 200grams Woolworths pork mince
  • 2 cloves garlic, crushed
  • 850grams Macro cannellini beans, rinsed, drained
  • 250grams frozen chopped spinach, thawed
  • 1/3 punnet thyme, leaves picked
  • 2 cups Woolworths Greek-style natural yoghurt
  • 1/4 cup plain flour
  • 1 free range egg, lightly whisked
  • 666grams Woolworths washed white potatoes, very thinly sliced
  • 1 1/2 cups Woolworths shredded tasty cheese

Description

This pork and potato pie, has thin layers of crispy potato that create a beautiful scallop-like appearance atop this super simple pork pie. A great dish to share with the whole family.

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Grease a 18x26cm (base), 2.5L (10 cup) rectangular baking dish. Heat oil in a large, deep frying pan over medium-high heat. Add pork and cook, stirring to break up any lumps, for 5 minutes or until browned.

Step 2 of 3

Add garlic, beans and spinach and cook, stirring for 3 minutes or until mixture has combined and is hot. Stir half of the thyme through bean mixture. Whisk yoghurt, flour, egg and 1/2 cup water together in a small bowl.

Step 3 of 3

Pat potato dry with paper towel. Place half of the pork mixture over base of prepared dish. Top with half of the yoghurt mixture and 3/4 cup cheese. Top with half of the potato, pressing down slightly. Repeat layers, ending with potato. Brush top with remaining oil. Bake for 50 minutes or until potato is golden-brown and crisp. Sprinkle with remaining thyme. Serve.
