- 1/4 cup extra virgin olive oil
- 3 potatoes, coarsely chopped
- 425grams Woolworths corn kernels, drained
- 100grams Sweet Solanato® tomatoes, halved
- 300grams Woolworths cooked corned beef, coarsely chopped
- 4 Woolworths eggs
- 2tablespoons continental parsley, chopped
Description
With tender corned beef, fried egg and crispy potato, this easy-to-make hash makes a comforting breakfast.
Method
Step 1 of 3
Heat oil in a large heavy-based frying pan over medium-high heat. Add potato and cook, stirring occasionally, for 10-15 minutes or until just tender and golden-brown. Transfer to a plate.
Step 2 of 3
Add corn to pan and cook, stirring, for 5-6 minutes or until golden-brown. Add tomatoes and cook, stirring, occasionally, for 2 minutes or until tomatoes start to soften. Stir in corned beef and potatoes.
Step 3 of 3
Make four indents in potato mixture. Crack an egg into each indent. Cook for 5 minutes for a medium egg or until cooked to your liking. Serve sprinkled with parsley and freshly cracked black pepper.
