  • 4 wholemeal pita
  • 140grams tomato paste
  • 1teaspoons chilli powder
  • 1 avocado
  • 2 tomatoes
  • 300grams sweet potato, boiled or steamed
  • 2 zucchini
  • 2teaspoons olive oil
  • 1tablespoons cumin
  • 200grams light Greek-style yoghurt
  • 500grams extra lean beef mince
  • 3 clove garlic
  • 1/2 cup mozzarella, shredded

Method

Step 1 of 3

Preheat oven to 200°C.

Step 2 of 3

Heat oil in a medium saucepan over medium heat. Add mince, garlic, cumin and chilli. Cook for 5 minutes, stirring to break up the mince. Add tomato paste, grated zucchini and mashed sweet potato. Cook for a further 2-3 minutes or until reduced.

Step 3 of 3

Slice pita into triangles and place into baking dish. Bake for 5 minutes, top with mince and cheese then bake for 5 minutes or until cheese is golden. Remove from the oven and top with avocado and tomatoes. Serve with yoghurt.
