- 2tablespoons canola oil
- 400grams cauliflower florets
- 2 medium onion, peeled and diced
- 300grams potatoes, peeled and chopped into cubes
- 200grams chicken breasts, skinless, diced
- 4 cloves garlic, peeled and minced
- 5centimeters ginger, peeled and chopped
- 1teaspoons ground coriander
- 2teaspoons cumin
- 1/2teaspoons turmeric powder, dried, rinsed
- 100grams spinach
- 150grams peas, frozen
- 1 bunch coriander, fresh, chopped, stalks included
- 40grams mango chutney (to serve)
Description
Adding chicken makes this aloo gobi a tasty and hearty main dish.
Method
Step 1 of 4
Pre-heat the oven to 200°C. Boil the potatoes in a pot of water for 6-7 minutes. Remove with a slotted spoon and add the cauliflower. Cook for 3 minutes and drain well. Toss the potatoes and cauliflower in a bowl with a little oil.
Step 2 of 4
Spread the potatoes and cauliflower on a baking sheet and roast for 12 minutes. Heat the oil and cook the chicken and onions for 6-7 minutes. Add the garlic and ginger and cook for 2 minutes, stir in the spices, coriander stalks and peas and cook for 2 minutes.
Step 3 of 4
Add the cauliflower and potatoes to the pan and stir to coat, adding a little water if necessary. Add the spinach and cook for 2-3 minutes, until wilted.
Step 4 of 4
Serve with the rest of the coriander on top and mango chutney on the side.
