  • 200grams sour cream (to serve)

Description

Varenyky are traditional Ukrainian dumplings which can be sweet or savoury. as a dessert they are often filled with cherries.

Method

Step 1 of 4

Place the cherries in a large bowl and sprinkle over the sugar. Mix well and set aside for 1 hour to release the cherry juices.

Step 2 of 4

Sift the flour into a large bowl, add the salt and pour in 175ml of cold water. Mix well with your hands to form a dough ball and divide into 2 pieces. Cover the piece not in use with a damp tea towel.

Step 3 of 4

Tip the dough onto a floured work surface and knead for 2-3 minutes. Roll out to 1/4 inch thickness. Cut circles of dough with a cookie cutter or large glass and place 2 cherry halves on one side of each circle. Fold over and seal the edges by pinching the sides together.

Step 4 of 4

Repeat with the remaining cherries and dough. Bring a large pot of lightly salted water to the boil and cook the dumplings in batches for 3-4 minutes, until they float to the top of the water. Drain well and serve with sour cream.
