For the base
- 12 sweet-meal biscuits
- 3tablespoons granulated sugar
- 75grams butter, melted
- 4 medium eggs, yolks only needed
- 4 medium limes, keep the juice and zest
- 1tablespoons kaffir lime leaves, chopped
- 400grams condensed milk
- 2/3 cup cream
- 2teaspoons icing sugar

Method
Step 1 of 4
Prepare a muffin baking tray by lining with 1 tsp of butter. In a bowl, smash the biscuits and combine with melted butter and granulated sugar. Once the mixture is fully combined, line the muffin trays with the mixture and compress down quite hard.
Step 2 of 4
You can either just do a base or bring the base up the sides also depending on preference. Leave the base to set in the fridge while you make the filling. Pre-heat the oven to 170°C.

In a mixing bowl, whisk the egg yolks in with the lime juice and half of the zest. Add the condensed milk incrementally to the mixture. Pour the mixture evenly into the biscuit bases and bake in the oven for 10 minutes. Then remove and allow to cool.
Step 4 of 4
Let the pies cool fully in the fridge while you combine the cream, icing sugar and lime leaves and whip to form peaks. Now serve the pie with the lime leaf cream on top and garnish with some zest.
