- 1/2tablespoons vegetable oil
- 500grams pork steaks, cut into bit sized chunks
- 2 shallots, finely chopped
- 1tablespoons ginger, finely grated
- 1 red chilli, de-seeded and finely chopped (optional)
- 75grams brown sugar
- 1tablespoons fish sauce
- 4 sprig spring onions, halved and shredded lengthways
- steamed rice, to serve
- broccoli, to serve
Method
Step 1 of 6
Heat 1 tablespoon of oil in a wok or fry pan over a high heat. Stir fry the pork in batches for 5 minutes until browned all over. Remove with a slotted spoon and set aside.

Cook rice as per the instructions on pack.
Step 3 of 6
Turn the heat right down and add the remaining oil, then stir in the shallots, ginger and chilli. Cook over a low heat for 3 minutes until just starting to soften.

Add the sugar, fish sauce and 200ml water to the pan and stir everything together. Bring to the boil, stirring, so that the sugar dissolves, then return the pork to the pan. Bubble vigorously for 8-10 mins until the sauce thickens to coat the meat and become glossy. Taste and stir in a little more fish sauce, if needed.

Steam or boil broccoli.
Step 6 of 6
Serve caramelised pork with steamed rice and broccoli. Sprinkle with spring onions to serve.
