- 100grams chestnut mushrooms, chopped
- 3 cloves garlic, peeled and chopped
- 50grams spinach, chopped
- 50grams pak choi, finely sliced
- 1 medium red onion, finely diced
- 50grams bamboo shoots, finely sliced
- 1/2 bunch coriander, fresh, chopped
- 1tablespoons soy sauce, reduced salt
- 8 wonton wrappers

Description
These veggie packed wontons make a delicious starter or light lunch.
Method
Step 1 of 4
Heat a tablespoon of oil in a large non-stick pan on a medium high heat and fry the mushrooms, spinach, pak choi, onion and bamboo shoots for 3-4 minutes. Stir in the garlic, coriander and soy sauce and cook for 2 more minutes.
Step 2 of 4
Spoon a teaspoon of filling onto on half of each wrapper. Spread out slightly and fold the other half over, pleating the edges with a little bit of water to stick.

Steam for 6 minutes until the wrapper is translucent.
Step 4 of 4
Heat the remaining oil in a large non-stick pan on medium high heat, add the dumplings (ensuring they don't touch) and fry for 2 minutes on each side until lightly golden. Drain on kitchen towel and serve.
