- 2 medium zucchini, sliced in half, lengthways
- 400grams minced beef
- 1tablespoons canola oil
- 1 medium onion, peeled and diced
- 2 cloves garlic, peeled and diced
- 1 small red chilli, sliced
- 1 small green chilli, sliced
- 1teaspoons cumin
- 100grams mixed beans, drained
- 1/3 cup passata
- 80grams parmesan, grated

Description
A spicy, chewy and meaty way to enjoy zucchini.
Method
Step 1 of 7
Pre-heat the oven to 180°C.
Step 2 of 7
Slice the zucchini in half lengthways and remove the flesh from the centre and set aside.
Step 3 of 7
Bake the zucchini shells in the oven on a baking tray for 10 minutes.
Step 4 of 7
Heat up a pan with the canola oil to a medium heat and fry the mince for 8 minutes or until browned.
Step 5 of 7
Drain any excess liquid from the pan and add the onion, garlic and zucchini flesh and fry together for 3 minutes.
Step 6 of 7
Add the chillies, passata, cumin and beans to the pan and cook all this for 6 more minutes while tossing.
Step 7 of 7
Remove the zucchini boats from the oven and fill with the beef mix, top with parmesan and grill for 3 minutes before serving.
