- 2tablespoons olive oil
- 1 onion, diced
- 2 red capsicum, deseeded and diced
- 2 cloves garlic, crushed
- 3/4teaspoons dried oregano
- 400grams can chopped tomatoes
- 4 eggs
- 20grams feta cheese, crumbled
- 4 toasted gluten-free pitta breads (to serve)

Method
Step 1 of 4
Heat the oil in a frying pan over a medium heat, then add the onion, peppers, garlic and oregano and cook for 5 minutes.
Step 2 of 4
Add the tomatoes and cook for a further 5 minutes. Pour the tomato mixture into a shallow ovenproof dish and make 4 dips in the mixture.
Step 3 of 4
Crack the eggs into the dips, sprinkle with the feta and cook under a preheated hot grill for 3-4 minutes.
Step 4 of 4
Serve with toasted pitta breads.
