- 3tablespoons Barker’s Jam Boysenberry Jam
- 1 cup plain flour
- 1tablespoons baking powder
- 1/4teaspoons salt
- 1 egg
- 1/4 cup white sugar
- 3/4 cup milk
- 1 cup coconut yoghurt
- 200grams mixed berries (to serve)

Method
Step 1 of 7
Sift the flour, baking powder and salt into a bowl.
Step 2 of 7
In a separate bowl, beat the egg and sugar with a whisk until pale and thick.
Step 3 of 7
Add the egg mixture and the milk to the dry ingredients and mix until just combined.
Step 4 of 7
Gently heat a non-stick frying pan and drop tablespoonfuls of the mixture in to form perfect circles.
Step 5 of 7
When bubbles start to burst on the top of the pikelets, turn them over and cook the second side until golden. Move onto a clean tea-towel to cool.
Step 6 of 7
Fold 3 tablespoons of Barker’s Boysenberry Jam through 1 cup of coconut yoghurt. Spread an even layer between each pikelet stacked.
Step 7 of 7
Add berries to serve.
