- 250grams rye flakes
- 100grams coconut flakes
- 100grams dates, pitted and chopped
- 100grams hazelnuts, chopped
- 100grams pumpkin seeds
- 2tablespoons maple syrup
- 1teaspoons vanilla

Description
This easy granola comes together in minutes and can be made with any nut or seed you have to hand.
Method
Step 1 of 5
Pre-heat the oven to 150°C/130°C fan-forced and line two large baking trays with parchment.
Step 2 of 5
Mix all the dry ingredients together in a large bowl.
Step 3 of 5
Whisk the olive oil, maple syrup and vanilla together in a small bowl and pour over the dry ingredients, mixing well.
Step 4 of 5
Divide the mixture into two batches and spread half between two baking trays, bake for 15 minutes, stir and return to the oven for a further 10 minutes.
Step 5 of 5
Repeat the above with the second batch. Allow the granola to cool completely, break up any large clusters and serve.
