- 350grams leftover roast beef, sliced
- 250grams fresh spinach leaves, rinsed
- 450grams ready-cooked beetroot, not in vinegar, quartered
- 3tablespoons extra virgin olive oil
- 1tablespoons balsamic vinegar
- 1/2 clementine, juice only
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 1 handful fresh thyme, leaves picked
Method
Step 1 of 2
In a large bowl, gently toss together the leftover beef, spinach, and beetroot. In a small bowl or jug, whisk together the olive oil, balsamic vinegar, and citrus juice. Season with salt and black pepper.

When ready to serve, drizzle the dressing over the beef and beetroot salad, and scatter over the thyme leaves.
