  • 1 handful fresh wild rocket leaves
  • 175grams sliced pastrami or other sliced cooked beef from the deli counter
  • 8-10 green olives, pitted and sliced
  • 1 handful plump raisins
  • 2teaspoons capers, rinsed and gently squeezed dry
  • 1teaspoons olive oil (to drizzle)
  • 1 small handful fresh flat-leaf parsley, finely chopped
  • 1 pinch salt
  • 1 pinch freshly ground black pepper

Method

Step 1 of 2

First, make the salsa. In a bowl, mix together the olives, raisins, capers, oil, and parsley. Taste, and season with a pinch of salt and some black pepper.

Step 2 of 2

Arrange the rocket and pastrami or other sliced beef in a shallow serving bowl. Spoon over the salsa, and serve at room temperature.
