  • 1 red capsicum, cut into strips
  • 1 yellow capsicum, cut into strips
  • 1/2 bunch coriander leaves
  • 1 red onion, sliced
  • 1 lime, cut into wedges (to serve)
  • 40grams fajita mix
  • 125grams can red kidney beans, drained and rinsed
  • 450grams microwave brown rice
  • 1tablespoons olive oil
  • guacamole (to serve)
  • 2 clove garlic, crushed
  • 350grams rare roast beef, sliced, cut into strips

Method

Step 1 of 3

Heat rice according to packet instructions. Set aside.

Step 2 of 3

Heat olive oil in large frying pan over medium heat. Add onion and capsicums and cook for 7 minutes stirring occasionally. Add garlic and fajita mix and stir for 2 minutes longer.

Step 3 of 3

Add rice, beef and kidney beans to pan. Stir for 2 minutes or until heated through. Top with coriander leaves. Serve with guacamole and lime wedges.
