- 2 tomatoes (diced)
- 1/2 bunch coriander leaves (roughly chopped)
- 1 cup shredded lettuce
- 1teaspoons ground coriander
- 1teaspoons ground cumin
- 200grams extra lean minced beef
- 4 wholegrain tortilla wraps
- 420grams Macro 4 bean mix
- 1tablespoons olive oil
- 2 garlic cloves (crushed)
- 2 cup light tasty shredded cheese
- 400grams diced Italian tomatoes (no added salt)

Method
Step 1 of 4
Preheat oven to 180°C.
Step 2 of 4
Heat oil in a medium saucepan over medium heat. Add garlic and sauté for 1-2 minutes. Add mince, cumin and coriander and cook for 2-3 minutes or until browned.
Step 3 of 4
Stir through the 4 bean mix and Italian tomatoes and continue to cook until thickened. Allow to cool.
Step 4 of 4
Fill wraps with mince mixture, roll up and place into a 1.5L baking dish. Sprinkle with cheese and bake for 20 minutes or until cheese is melted and starting to turn golden. Top enchiladas with lettuce, tomato and coriander to serve.
