Method

Step 1 of 3

Bring 2 cups water to the boil over medium-high heat. Add rice, then reduce heat to medium-low and simmer, covered, for 30 minutes or until rice is tender and water has evaporated. Stand, covered, for 10 minutes.

Step 2 of 3

Meanwhile, heat oil in a large saucepan over medium heat. Add mince and cook, breaking up lumps with a wooden spoon, for 5 minutes or until browned. Add carrot and onion, then cook, stirring, for 5 minutes or until softened.

Step 3 of 3

Add paprika, cumin, tomatoes, corn and currants, then cook, stirring occasionally, for 10 minutes or until liquid has reduced slightly. Serve rice topped with beef mixture, yoghurt and coriander.
