- 500grams chicken breast fillets
- 2tablespoons no added salt tomato paste
- 1 1/2tablespoons smoked paprika
- 1teaspoons honey
- 4 cobs sweet corn, husks removed, cut into 4
- 300grams rainbow coleslaw
- 1/4 wombok, finely sliced
- 1/2 cup no-fat Greek-style yoghurt
- 1 small lemon, juiced
Description
Featuring succulent chicken breast paired with a crunchy slaw, watch this BBQ chicken recipe become one of your go-to weeknight dinners.
Method
Step 1 of 4
Place tomato paste, paprika, honey and ? cup water in a large bowl. Season, then mix to combine. Add chicken and turn to evenly coat in marinade. Set aside to marinate for 15 minutes.
Step 2 of 4
Preheat a barbecue grill or large frying pan over medium heat. Cook chicken for 10 minutes on each side, continually basting with marinade, or until lightly charred and cooked through. Set aside to rest. Cook corn, turning, for 5 minutes or until charred.
Step 3 of 4
Meanwhile, toss together coleslaw and wombok in a large bowl. Combine yoghurt and lemon juice in a bowl, season and drizzle over coleslaw.
Step 4 of 4
Slice chicken and serve with coleslaw and corn.
