Horseradish butter
  • 1tablespoons horseradish cream
  • 100grams butter, softened
  • 1teaspoons worcestershire sauce
  • 1 lemon, rind finely grated and 1 tbs juiced
  • 1 bunch chives, finely chopped
  • 4 corn cobs (with husks)
  • 1 cup parmesan, finely grated

Description

Serve your barbecued corn with lemony horseradish butter and parmesan on top. It's a perfect side dish for your next barbecue.

Method

Step 1 of 4

Reserve 1 tbs chives to garnish. Combine butter, lemon rind, lemon juice, horseradish cream, worcestershire sauce and remaining chives in a bowl. Season with salt and pepper. Set aside.

Step 2 of 4

Place corn on a microwave-safe plate and microwave on high for 2 minutes or until husks have softened. Set aside for 5 minutes to cool.

Step 3 of 4

Peel back husks, keeping them attached at the base. Remove and discard silk. Replace husks over corn and tie at the top with kitchen twine.

Step 4 of 4

Preheat barbecue grill on medium-high. Cook corn, turning often, for 5-8 minutes or until charred. Peel back husks, and re-tie. Place on a platter and spread with butter. Sprinkle with parmesan and reserved chives.
