- 1/3 cup rice wine vinegar
- 1tablespoons caster sugar
- 300grams shredded carrot
- 1kilograms chicken mince
- 1/4 cup Maggi seasoning sauce
- 3 garlic cloves, finely chopped
- 1/2 bunch spring onion, half thinly sliced, half cut into 6cm lengths
- 1teaspoons Chinese five-spice powder
- 1 free range egg, lightly beaten
- 2tablespoons Woolworths vegetable oil
- 8 brioche burger buns, halved
- 1/4 cup Japanese mayonnaise
- 2 Lebanese cucumbers, peeled into ribbons
- 1 long red chilli, thinly sliced
- 1/4 bunch coriander, leaves picked

Description
Take classic Vietnamese banh mi flavours and transform them into an irresistible chicken burger, complete with crunchy salad, chilli, coriander and mayo.
Method
Step 1 of 3
Place vinegar, sugar and 1/3 cup water in a medium bowl and stir until sugar has dissolved. Add carrot and stir to combine. Set aside until required, stirring occasionally.
Step 2 of 3
Meanwhile, preheat a barbecue grill or chargrill pan over medium heat. Combine mince, sauce, garlic, sliced onion, five-spice and egg in a large bowl. Using wet hands, evenly divide mixture and shape into 8 patties. Brush both sides of patties with oil, then cook for 3 minutes on each side or until cooked through.
Step 3 of 3
Grill buns, cut-sides down, for 1 minute. Spread bun bases with mayonnaise, then top with cucumber, patties, drained carrot, chilli, coriander and remaining onion. Sandwich with bun tops. Serve.
