- 2 flour tortillas
- 1teaspoons olive oil cooking spray
- 1/4 bunch mint, leaves picked, finely chopped
- 1 clove garlic, crushed
- 1/4 cup extra virgin olive oil
- 1/2 small lemon, juiced
- 1/2 cup tzatziki
- 1/2 avocado, deseeded, cut into thick wedges
- 4 solanato tomatoes, thickly sliced
- 1 spring onions, thinly sliced

Method
Step 1 of 3
Preheat oven to 180°C/160°C fan-forced. Line a large baking tray with baking paper. Place tortillas on tray. Using a fork, prick 5 times, then spray with oil. Bake for 10 minutes or until golden and crisp. Set aside for 5 minutes to cool.

Meanwhile, combine mint, garlic, oil and lemon juice in a small bowl.
Step 3 of 3
Spread each tortilla with tzatziki. Top with avocado, tuna, tomato and onion. Season with pepper. Drizzle over mint mixture, and serve.
