Description
Baked eggs in avocado boats are a simple but delicious way to start the day, perfect served with sourdough toast for dipping.
Method
Step 1 of 3
Pre-heat the oven to 200°C. Make a small well in each avocado half (depending on the size of the stone) and crack an egg into each.
Step 2 of 3
Scrunch up foil and place on a baking tray. Nestle each egg filled avocado half in the foil to keep them upright. Season the eggs and bake for 12-15 minutes.
Step 3 of 3
Serve each avocado half with a drizzle of sriracha and chives on top, with buttered sourdough toast on the side for dipping.
