  • 2teaspoons fish sauce
  • 1 avocado
  • 1/4 green cabbage, shredded
  • 1/4 red cabbage, shredded
  • 1 carrot, peeled and grated
  • 1 red chilli, deseeded and chopped
  • 1/4 cup coriander leaves
  • 1 Lebanese cucumber
  • 1/4 cup mint leaves
  • 1 spring onion, sliced
  • 210grams can red salmon, drained, flaked
  • 1/2 lime juice
  • 1/2 lime rind, finely grated
  • 1teaspoons brown sugar
Instruction tip

If you're preparing the avocado ahead, sprinkle it with lemon juice to prevent it from discolouring.

Method

Step 1 of 2

Halve the cucumber and slice. Coarsely grate carrot and combine in a bowl with cucumber, cabbage, spring onion, coriander and mint. Halve the avocado, remove the stone and slice. Add to the salad with flaked salmon.

Step 2 of 2

Whisk lime rind and juice, fish sauce, brown sugar and chilli together until sugar has disolved. Pour over salad and toss to combine. Serve.
