  • 1 1/3 cup self-raising flour
  • 2teaspoons icing sugar
  • 65grams butter, melted (save 40g butter for later)
  • 1 pear
  • 1 apple
  • 1teaspoons ground cinnamon
  • 2teaspoons orange, zest finely grated
  • 1/2 cup natural yoghurt (or crème fraîche to serve)
  • 1 1/2 cup buttermilk
  • 1 egg
  • 1/4 cup caster sugar
  • 2tablespoons vegetable oil

Method

Step 1 of 5

Combine flour and sugar in a large bowl. In another bowl, using a fork, whisk buttermilk, egg, melted butter and orange zest together. Add to flour mixture and stir until smooth. Set aside.

Step 2 of 5

Cut apple and pear crossways into 8 slices each (don’t use the rounded end pieces; slices should be flat and the peel should run on the edge only).

Step 3 of 5

Heat a medium non-stick frying pan over low heat. Add a quarter of the extra butter and 2 teaspoons of oil and swirl around the pan. Add 4 slices of apple to pan. Cook for 30 seconds or until golden. Spoon 2 tablespoons of batter over each apple slice and smooth with the back of a spoon to make an 8-10cm circle (the mixture should be in a thin layer over the slice).

Step 4 of 5

Cook for 2 minutes or until bubbles appear on the outside edges and the underside is golden. Turn and cook for another minute or until cooked and golden. Transfer to a plate.

Step 5 of 5

Repeat in batches with remaining fruit and batter. Dust with a little icing sugar and cinnamon. Serve warm or at room temperature with yoghurt.
