  • 1 large granny smith apple, thinly sliced
  • 1/2 lemon, juiced
  • 2 stick celery, cut into matchsticks
  • 1/2 cup blueberries
  • 2tablespoons white wine vinegar
  • 120grams baby spinach leaves
  • 1tablespoons caster sugar
  • 1/3 cup walnuts, toasted
  • 1/4 cup vegetable oil

Method

Step 1 of 3

Place blueberries in a blender and blend until smooth. Transfer to a small saucepan over medium-low heat. Add sugar and cook for 2 minutes or until mixture has darkened and reduced. Add vinegar and a pinch of salt and cook for 1 minute. Set aside to cool. Add oil and whisk to combine. Set aside.

Place apple slices in a bowl and toss with lemon juice. 

Step 3 of 3

Arrange baby spinach, apple and celery on a plate. Top with walnuts, sprinkle with pepper and drizzle with blueberry dressing to serve.
